What do churches that have already gone down this road down? Close that "church" and open a "new" church with a new name, like a business?

We do not give advice, but you may have answered you own question.

It's possible that you could simple notify the IRS that you wish them to revoke your application for 501c3 status. After all, as you read on the web page, the IRS itself says, you need not apply.

As for being a business, if your church is incorporated with the state, it is indeed a business and governed by civil corporate codes.

In that case, it must follow state law which may conflict with God's law.

Follow the IRS rules for dissolving the church and disposing of its assets.

Bankrupt and close the corporation if the church is incorporated.

Start fresh and leave the state out of your religious business so you can live under God's law and not state law (which often contradicts or censors God's law).
